After the minimum 28 weeks of farming in the area, the oysters are subjected to hardening. It is this stage, during which the oysters develop their permanently closed shells and thus their extended lifespan, along with the careful packaging techniques, that ensures that Hutre de Normandie stay fresh during transport and marketing, with a shell with no chipped or brittle parts.
